ANALISIS PROSEDUR PENGADAAN BAHAN MAKANAN DI HOTEL RENAISSANCE BALI ULUWATU RESORT & SPA

Abstrak

Usaha hotel adalah usaha yang menyediakan akomodasi dan pelayanan jasa makanan dan minuman, dan memiliki berbagai dapartemen yang bersangkutan. Salah satunya departemen Finance. Dimana departemen Finance memiliki peran yang sangat penting dalam pengadaan bahan makanan. Dalam prosedur pengadan makanan melibatkan beberapa section yaitu Purchasing, Receiving dan Storekeeper. Prosedur pengadaan bahan makanan diawali dengan pembelian bahan makanan, penerimaan bahan makanan, penyimpanan bahan makanan, dan pengeluaran bahan makanan. Tujuan penelitian ini untuk mengetahui bagaimana prosedur pengadaan bahan makanan yang terjadi di hotel Renaissance Bali Uluwatu Resort & Spa pada tahun 2023. Penelitian ini menggunakan Teknik deskriptif kualitatif dengan memperoleh data melalui dokumentasi, obeservasi dan wawancara dengan staff purchasing, receiving dan storekeeper. Hasil penelitian ini menunjukkan bahwa bagian receiving mengalami perbedaan dengan konsep dari Wiyasha.

The purpose of this study is to find out how the food procurement procedure occurred at the Renaissance Bali Uluwatu Resort & Spa hotel in 2023. The research employs a qualitative descriptive technique, collecting data through documentation, observation, and interviews with staff in purchasing, receiving, and storekeeping. The findings indicate that the receiving section shows differences from the concept proposed by Wiyasha.
